If you know us, you know we love tacos. So much so that we are even going to do a Taco Thanksgiving this year, I will post those pictures next week. The tacos featured here are some of my favorites. Homemade mango salsa tops the deliciously season shrimp to make these tacos a pleasant meal for anyone.
Mango salsa
1 Mango
1 Onion or 2 shallots
1-2 green onions
2-3 Roma tomatoes
1 jalapeño (pinch of chili powder can work if you don't like too much spice)
1 lime
Directions
1. Peel and chop mango into small bite sized chunks.
2. Slice the jalapeño into small pieces and remember, when cutting jalapeños, if you don't want it too spicy, ditch the seeds. Add the chopped jalapeño to the mango.
3. Chop the rest of your veggies into similar bite sized pieces and toss with the mango. We don't add salt because we are low sodium right now, but you can.
4. Squeeze half the lime onto the salsa and let it sit for at least an hour. Cut the other half of lime into slices so anyone can add more flavor to their taste.
5. Serve with tacos or tortilla chips.
