When I think of sun dried tomatoes, I think of pasta dishes, not shrimp, but this delicious combination of sun dried tomatoes, shrimp, and frozen veggies made a delicious and quick dinner that pleased everyone. Can't wait to try the next dish with sun dried tomatoes. All this inspiration for being healthier as a family is making for some yummy new dishes.
Sundried tomatoes and Shrimp
2 sundried tomatoes (the kind in the jar)
1 pound bag frozen shrimp
1 bag frozen mixed vegetables
2 cloves of garlic
2 tablespoons of butter
Directions:
1. Sautee the shrimp with butter for about 5 minutes.
2. Add the garlic (minced or chopped, whichever you prefer).
3. Add sundried tomato and frozen veggies, cook for another 5-8 minutes depending on your veggie choice.
4. Serve with a glass of chilled Sauvignon Blanc
