It's a running joke in our family. Adam never follows a recipe and since I'm trying to do this blog based on his recipes, it can be difficult because he makes up most of them as he goes along with estimated measurements. Thankfully, with my years of counting calories and measuring for cookies, I'm a very good estimator. We started using Butcher box recently and they sent over some good recipe links. Peri Peri chicken with coconut rice sounded delish. (Here's the original link). Adam's only variation was he doubled the recipe but kept the coconut milk the same. I think it was a good call. I loved the taste of coconut in the rice, but 2 cans might have been too much.
