Or rather when he says it's too damn cold to smoke the ribs....
We just do them in the oven with a dry rub instead. It was low and slow for a while and then he added some Guy Fieri BBQ sauce, because we love Guy. Add in the veggies that I asked my sister to pick up. Look at that pretty rainbow medley we had for dinner.
Roasted vegetable medley
Ribs with dry rub and Guy Fieri BBQ sauce, roasted veggie medley and leftover rice fried into a patty.
Leanne's Rainbow Veggie Medley
Assorted vegetables (carrots, red onions, yellow peppers, zucchini, and broccoli)
Balsamic vinegar
Fresh Thyme
Directions:
1. Preheat oven to 425 degrees.
2. Chop and arrange vegetables on a foil lined baking sheet.
3. Drizzle with approximately 1 TBS of balsamic vinegar.
4. Cook for 20-25 minutes
Adam's Dry Rub Rib
1 TBS Cumin
1 TBS Garlic powder
2 tsp Black pepper
2 tsp Paprika
2 lb pork ribs
1/4 cup Guy Fieri BBQ sauce (Kansas City Smoky & Sweet)
Directions:
1. Mix Dry ingredients (at least 6 hours before dinner) and rub all over the ribs.
2. Let ribs sit about 1 hour with rub & Preheat oven to 250 degrees.
3. Cook for 4 hours at 250.
4. Remove and add Guy Fieri BBQ sauce. Return to oven for last hour but increase heat to 350.
5. Serve with veggie medley and any other side you think will taste good.
